  1. Preheat your oven to 400 degrees F. Line the bottom of a cookie sheet with parchment paper.
  2. Drain and rinse the chickpeas thoroughly, then pat them dry with a clean towel. DO NOT SKIP THIS STEP! Removing as much moisture as you can will help these get crispy.
  3. In a bowl, toss the chickpeas with olive oil, your spices of choice and salt.
  4. Spread the chickpeas on top of the parchment paper on your cookie sheet. Try to get these in an even layer so that the chickpeas are not crowded together (if crowded, the chickpeas may roast unevenly and not get crispy).
  5. Place in the oven to roast for approximately 15 minutes.
  6. Remove the pan and shake it to move the chickpeas around (so they have an opportunity to crisp on all sides) and place back in the oven for another 15 - 20 minutes.
  7. Chickpeas are done when they are golden brown and crunchy. Remove from the oven and let them cool for a few minutes on the pan (they will continue to crisp up as they cool). Serve and enjoy!
