  1. Preheat oven to 350ยฐF. Line 2 large baking sheets with parchment paper (to prevent sticking). You can re-use the paper to bake more rounds of cookies, just make sure the baking sheet is cooled before you lay the scooped or sliced cookie dough on it before baking.

  2. Stir together flour, cream of tartar, baking soda, salt, and spices in a bowl.

  3. Cream butter and sugar with an electric mixer until pale and fluffy. Add vanilla, then beat in eggs 1 at a time. Add flour mixture, mixing until just combined.

  4. At this point dough can be frozen for later use.

    • For slice and bake method: Shape into three 10 in logs of uniform width and freeze. (Dough can be frozen up to 3 months).
    • For scooped method: Scoop with a cookie scoop or two table spoons and shape into rounded mounds.
  5. When ready to bake, thaw in refrigerator if needed (for scoop method, thaw completely before scooping. for slice and bake, thaw just until logs are easy to slice through cleanly, and cut into 1/4 inch slices). Place slices or scoops on your lined cookie sheet. Bake 10-12 minutes or until cookies are set. Cool 5 minutes on the cookie sheet then transfer to a cooling rack

When I want a cookie that is a little "extra," I like to use a cookie scoop so they from a nicely rounded shape when baked, then dip the bottom in melted chocolate (dark, milk or white).
